Banana, Oat & Honey Flapjacks

Ingredients
  

  • 150 g Rolled oats
  • 50 g Nuts (your preference)
  • 30 g Madhūka Nibs
  • 90 g Self-raising flour
  • 50 g Dried apricots, chopped
  • 70 g Soft brown sugar
  • 125 g Low-fat spread, melted
  • 3 tbsp Honey (or golden syrup as preferred)
  • 2 Medium-ripe bananas
  • 2 tsp Vanilla extract
  • 1 Egg

Instructions
 

  • Preheat the oven to 180°C/fan 160°C/gas 4. Grease and line a 16 x 24cm or 20cm square tin with baking paper.
  • Put all the dry ingredients into a mixing bowl, including the Madhūka Nibs.
  • Stir in the spread, syrup, bananas, vanilla extract and egg, mix well and spoon into the prepared tin.
  • Smooth the surface and bake for 20–25 minutes until lightly golden and firm to the touch.
  • Cool for 10 minutes, then cut into 20 squares and leave in the tin until completely cool.
