Salmon Rice Bowl

A super healthy, tasty balanced recipe that is packed with protein and fibre.

Ingredients
  

  • 2 Salmon fillets
  • 150 g Brown rice
  • 1 Avocado
  • 100 g Cucumber
  • 4 Tomatoes
  • Handful of rocket leaves

For the marinade

  • 2 tbsp Olive oil
  • 1 tbsp Madhūka Powder
  • 1 tsp Chilli flakes
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Hot sauce

Instructions
 

  • Cook the brown rice for 12-15 minutes or until soft.
  • At the same time, combine the olive oil, chilli flakes, garlic powder, paprika, hot sauce, and Madhūka Powder. Add the salmon and stir until thoroughly coated.
  • Add 1 tsp oil to a pan and add the salmon, cooking on a medium heat for 10 minutes.
  • Assemble your bowl with the rice, chopped salad ingredients and the cooked salmon.
  • Top with chives (optional) and season with salt and pepper.
