Ingredients
  

  • 20-25 papdis crisp fried dough wafers
  • 1 cup boiled chickpeas
  • 1 large potato boiled, peeled, and chopped
  • 1 cup plain yogurt whisked with a teaspoon of sugar
  • 1/2 cup tamarind chutney
  • 1/2 cup mint-coriander chutney
  • 1/2 cup sev small pieces of crunchy noodles made from chickpea flour paste
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped tomatoes
  • 1/4 cup fresh coriander leaves chopped
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon chaat masala
  • 1 teaspoon black salt
  • 2 teaspoons Mahua powder
  • Fresh pomegranate seeds for garnish optional

Instructions
 

  • Arrange the papdis in a single layer on a large serving platter.
  • Top each papdi with some boiled potato cubes and boiled chickpeas.
  • Drizzle whisked yogurt over the papdis. Follow with generous drizzles of both tamarind chutney and mint-coriander chutney.
  • Sprinkle roasted cumin powder, red chili powder, chaat masala, and black salt evenly over the prepared papdis.
  • Sprinkle the chopped onions, tomatoes, and fresh coriander leaves over the top.
  • Generously sprinkle sev over the entire dish. Lastly, dust the Mahua powder over the chaat for a sweet and aromatic finish.
  • If desired, garnish with fresh pomegranate seeds for a burst of color and flavor.
  • Serve the Papdi Chaat immediately to enjoy the mix of flavors and textures.
